2021 Slingshot North Coast Cabernet Sauvignon Tasting Notes
The 2021 vintage produced a concentrated and bold Cabernet Sauvignon featuring characters of strawberry rhubarb pie, black pepper, clove, and fresh blueberry. The palate leads to flavors of baked fig, mild cigar box, and blackcurrant framed by a bold, gravely tannin structure. A touch of oak finishes the palate with an elegant balance between tannin, acidity, and body.
VINEYARD: Testa Vineyard Cabernet Sauvignon, Johnson Vineyard Cabernet Sauvignon

HARVEST DATE & BRIX: October 2021 at 25 Average Degrees Brix
FERMENTATION: Whole-berry fermentation in stainless steel fermenters with wet cap immersion, totaling 25 days of extended maceration
AGING: 40% new French oak barrels
ACIDITY, PH, & ALCOHOL: TA = 5.12, pH = 3.79, Alc = 14.5%
